- 1 tsp baking powder
- 0.5 tsp salt
- 1.5 cup unsweetened vanilla almond milk or milk of your choice
- 0.25 cup pure maple syrup
- 3 tbsp coconut oil, melted and cooled
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 cup shredded zucchini, excess moisture squeezed out in paper towel
