A Light and Bright Zucchini Ribbon Salad
This zucchini ribbon salad came together one hot afternoon when I had more summer squash than I could keep up with. Shaving the zucchini and yellow squash into long, thin ribbons with a vegetable peeler turns ordinary garden vegetables into something that feels special. The lime dressing is simple, just olive oil, lime juice, salt, and pepper, but it brightens every bite. Sweet corn kernels add a pop of sweetness, creamy avocado cools everything down, and crumbled queso fresco brings a salty finish. It’s my go-to when I want a fast, no-cook dinner that tastes like the best of summer.
Reasons to Love This Sweet Corn and Avocado Salad
- The vegetable peeler does all the hard work, no knife skills needed, and the ribbons look gorgeous on the plate.
- It’s a complete meal in one bowl: fresh vegetables, healthy fats from avocado, and protein from the corn and cheese.
- You can make it in 15 minutes flat, and there’s no oven or stove to clean up.
Key Ingredients for the Best Zucchini Ribbon Salad
- Zucchini and yellow squash: Look for small to medium squash that are firm and heavy for their size. Larger squash have more seeds and can be watery, which leads to a soggy salad. Store them in the fridge and use within a few days.
- Sweet corn: Fresh corn on the cob is ideal, raw kernels add a sweet crunch that makes this salad shine. If corn isn’t in season, frozen and thawed corn is a good substitute; just pat it dry before adding.
- Queso fresco: This mild, crumbly Mexican cheese adds a salty, creamy finish without melting. If you can’t find it, feta cheese is the closest substitute, use less because feta is saltier.
Tools You’ll Need for This No-Cook Salad
- Vegetable peeler, a Y-shaped one makes longer, more even ribbons
- Sharp knife for cutting corn kernels from the cob
- Large mixing bowl
Tips for Perfect Zucchini Ribbons and Dressing
For the best ribbons, choose medium-sized zucchini and yellow squash that are firm and straight. A Y-shaped vegetable peeler gives you longer, more even strips than a standard straight peeler. Peel from top to bottom, stopping when you see the seeds; then rotate the squash and peel the other side. Discard the seedy core, it doesn’t ribbon well and will make the salad watery.
Season the dressing generously before you add the vegetables. The squash and avocado absorb salt, so the salad needs enough in the beginning. If you’re serving it later, hold the avocado until just before serving to keep it from browning, and toss everything again with a little extra lime juice.
Easy Ways to Change Up This Summer Salad
If you don’t have yellow squash, all zucchini works fine. For a dairy-free version, skip the queso fresco and add toasted pepitas or pine nuts for crunch and richness. Swap the cilantro for fresh basil or mint for a different herb note. You can also add grilled corn instead of raw for a smoky flavor, or toss in some cherry tomatoes for extra color and juiciness. To turn it into a main dish salad, top it with grilled shrimp or shredded chicken.
What to Serve with Zucchini Ribbon Salad
This salad is wonderful on its own for a light lunch, but it also pairs beautifully with grilled chicken, fish, or steak. For a heartier meal, serve it alongside tacos or quesadillas. If you want extra crunch, top it with toasted pepitas, sliced almonds, or even crumbled tortilla chips. The creamy avocado and tangy lime dressing complement just about any summer main dish.
How to Store Leftover Zucchini Ribbon Salad
Store leftover salad in an airtight container in the refrigerator for up to one day. The avocado will brown and the ribbons will soften, so it’s best to eat it the same day. To minimize browning, press a piece of plastic wrap directly onto the surface of the salad before sealing the container. If you have leftover dressing, you can revive the salad with a splash of lime juice and a pinch of salt before serving again.
Frequently Asked Questions About Zucchini Ribbon Salad
Can I make this salad ahead of time?
It’s best fresh, but you can prep components ahead. Shave the squash and refrigerate the ribbons separately. Combine with dressing, corn, and herbs, then add avocado and cheese just before serving to keep them from browning or getting soggy.
How do I keep the avocado from turning brown?
Add the avocado right before serving and toss it with extra lime juice. The acid helps slow browning. For leftovers, press plastic wrap directly onto the salad surface before refrigerating to limit air exposure.
Can I use frozen corn instead of fresh?
Yes, frozen corn works well. Thaw it completely and pat it dry with paper towels to remove excess moisture. This prevents the salad from becoming watery and keeps the texture bright.
What can I substitute for queso fresco?
Feta cheese is the closest substitute. It’s saltier and more tangy, so start with half the amount and adjust to taste. Cotija cheese also works if you want a drier, saltier crumble.
How do I prevent the zucchini ribbons from getting watery?
Choose small, firm squash with fewer seeds and avoid the seedy core when peeling. Also, don’t overdress the salad, just enough dressing to coat the ribbons lightly. If the salad sits too long, drain any excess liquid before serving.
