A Refreshing Summer Salad with Watermelon and Strawberries
This strawberry watermelon cucumber salad is my go-to for hot summer days. I love tossing fresh summer produce into one bowl, the sweetness of the berries and melon pairs so well with cool cucumber and salty feta. It takes just a few minutes to throw together, and the bright colors make it look beautiful on any picnic or BBQ table. I always get asked for the recipe.
Why You’ll Love This Strawberry Watermelon Salad
- Sweet and salty contrast from watermelon, strawberries, and feta
- No cooking required, just chop and toss
- Bright, colorful presentation that’s perfect for parties
Key Ingredients for an Easy Summer Salad
- Watermelon: Choose a seedless melon for convenience. Look for one that feels heavy for its size and has a creamy yellow patch, that’s a sign of ripeness.
- English cucumber: Thin-skinned and less watery than regular cucumbers, so the salad stays crisp. No need to peel or seed.
- Feta cheese: Salty and creamy, it balances the sweet fruit. Buy a block and crumble it yourself for the best texture.
Kitchen Tools for This Picnic Salad
- Chef’s knife and cutting board for cutting the fruit and cucumber
- Large mixing bowl for assembling the salad
- Small whisk or fork for stirring together the dressing
Tips for the Best Watermelon Cucumber Salad
Cut your watermelon and cucumber into roughly the same size cubes so every bite has a little of everything. An English cucumber has thin, tender skin, so you don’t need to peel it. To keep the salad crisp, dress it right before you serve it. A sprinkle of flaky sea salt right at the end really makes the fruit pop.
Easy Variations for This Fruit Salad
Swap feta for crumbled goat cheese or cotija for a different salty kick. Add a diced jalapeño or a pinch of red pepper flakes if you want heat. For a dairy-free version, just skip the cheese or use a vegan alternative. A handful of fresh blueberries or sliced peaches can also be nice additions.
What to Serve with Strawberry Watermelon Cucumber Salad
This light, refreshing salad is a perfect side for grilled chicken, fish, or burgers. I also love it alongside tacos or as a cool companion to spicy dishes like jerk chicken. For a quick lunch, spoon it over a bed of greens or serve with a dollop of cottage cheese.
How to Store Leftover Strawberry Watermelon Cucumber Salad
Store the salad in an airtight container in the refrigerator for up to 2 days. The watermelon will release juice as it sits, so if you have leftovers, drain off any excess liquid before serving again. If you’re planning to have leftovers, consider dressing only the portion you’ll eat right away and keeping the rest undressed in the fridge.
FAQs About Strawberry Watermelon Cucumber Salad
Can I make this salad ahead of time?
Yes, you can prep the fruit and cucumber up to a day ahead and store them in separate containers in the fridge. Whisk the dressing and keep it separate. Combine everything just before serving to keep the salad crisp.
Can I use frozen strawberries?
Fresh strawberries are best for this salad. Frozen ones will release a lot of water and turn mushy as they thaw, making the salad soggy.
What can I substitute for feta cheese?
Crumbled goat cheese, cotija, or queso fresco all work well. For a dairy-free version, simply omit the cheese or use a vegan feta alternative.
How long does the salad last in the fridge?
It’s best eaten within 2 days. The fruit will soften and release juice over time, so drain any liquid before serving leftovers.
