Why These Loaded Peanut Butter Cookies Are My Go-To
Peanut butter cookies are a classic, but I wanted something more. So I started adding oatmeal for chew, then peanut butter chips, Reese’s Pieces, and chopped peanut butter cups. The result? A cookie that’s basically peanut butter in three forms. I first made these for Halloween, when the candy aisle at Smith’s is overflowing with all the good stuff. I grabbed bags of Reese’s Pieces and mini cups, and figured they’d be perfect mixed into a peanut butter oatmeal cookie. They were. My family devoured them, and I’ve been making them ever since, not just for Halloween, but anytime a serious peanut butter craving hits.
Why You’ll Love These Loaded Peanut Butter Cookies
- Three kinds of peanut butter, chips, candy, and the base dough, give every bite a different texture.
- Oatmeal adds a chewy heartiness that plain peanut butter cookies lack.
- They’re studded with colorful candy, so they look festive for parties or bake sales.
Key Ingredients for Ultimate Peanut Butter Cookies
- Peanut butter: Use creamy, not natural (the kind that separates), natural peanut butter can make cookies greasy or dry. Jif or Skippy works great.
- Old-fashioned oats: They give the cookies a hearty chew. Quick oats will make them mushy.
- Reese’s Pieces and peanut butter cups: Chop the cups into small chunks so they distribute evenly. You can swap in other peanut butter candies if you prefer.
Kitchen Tools for Peanut Butter Candy Cookies
- Stand mixer or hand mixer, creaming the butter and sugars properly makes a difference.
- Silpat baking mats or parchment paper, prevents sticking and helps cookies bake evenly.
- Cookie scoop (2-tablespoon size), gives uniform balls for even baking.
Tips for Perfect Peanut Butter Candy Cookies
Don’t overmix the dough once you add the dry ingredients, that keeps the cookies tender. Bake just until the edges are lightly browned; the centers will look soft. They’ll set up as they cool on the sheet. For a prettier finish, press a few extra chips or candy pieces onto the tops right after baking. And don’t skip the flaky sea salt on top, it balances the sweetness and makes the peanut butter flavor pop.
Expert Tips for Chewy Peanut Butter Oatmeal Cookies
Use old-fashioned oats, not quick oats, for the best texture. Cream the butter, peanut butter, and sugars really well, a full 2 minutes, so the cookies spread just right. If your dough feels too sticky, chill it for 15 minutes before scooping. That also helps prevent the cookies from spreading too much. Let them cool completely on the sheet before moving, or they might crumble.
Peanut Butter Cookie Variations to Try
Swap the Reese’s Pieces for chopped chocolate bars if you’d rather have a classic peanut butter and chocolate combo. For a less sweet cookie, reduce the sugar by 2 tablespoons and use dark chocolate chips instead of the candy. You can also make them gluten-free by using certified gluten-free oats and a 1:1 gluten-free flour blend, the texture stays great. If you’re short on mix-ins, just use one type of candy or double the peanut butter chips.
How to Serve Peanut Butter Candy Cookies
These cookies are fantastic on their own with a glass of cold milk. For a dessert platter, arrange them alongside brownies or blondies. A drizzle of melted chocolate over the top makes them extra indulgent for a party. If you’re serving them for a holiday, a light dusting of powdered sugar can dress them up.
Storing Baked Peanut Butter Cookies
Keep baked cookies in an airtight container at room temperature for up to 5 days. Layer them with wax paper between stacks to prevent sticking. They stay soft and chewy. If the weather is humid, add a slice of bread to the container to absorb excess moisture and keep them from getting soggy.
Freezing Peanut Butter Cookie Dough or Baked Cookies
To freeze the dough, scoop it into balls and place them on a lined baking sheet. Freeze until solid, then transfer to a freezer bag. You can bake from frozen, just add 1-2 minutes to the bake time. For baked cookies, let them cool completely, then freeze in a single layer on a sheet before bagging. They keep for up to 3 months. Thaw at room temperature or warm in a 300°F oven for a few minutes.
Best Way to Reheat Peanut Butter Cookies
To bring back that just-baked texture, warm the cookies in a 300°F oven for 3-5 minutes. They’ll soften and the chocolate will melt slightly. You can also microwave a single cookie for about 10 seconds, just be careful not to overdo it or they become tough. If you’re serving a crowd, the oven method works best.
Ultimate Peanut Butter Cookies FAQs
Can I use natural peanut butter?
I don’t recommend it. Natural peanut butter (the kind that separates) has less stabilizer, so the cookies can spread too much and turn out greasy. Stick with a standard creamy peanut butter like Jif or Skippy.
Why did my cookies spread too much?
Several things could cause that: the butter was too soft, you didn’t cream it enough, or the dough wasn’t chilled. Try chilling the scooped dough for 15 minutes before baking. Also make sure your baking soda is fresh.
Can I make these without oatmeal?
You can, but the texture will change. Replace the oats with an equal amount of all-purpose flour. The cookies will be more like classic peanut butter cookies, still good, but less chewy.
