Why These Rocky Ledge Bars Are a Sweet Celebration
When Two Peas and Their Pod was named a finalist in the 2010 BlogLuxe Awards for “Tastiest” Blog, I knew we had to celebrate with something special. I had been eyeing the Rocky Ledge bars in Martha Stewart’s Cookies book for months, and this felt like the perfect excuse to finally bake them. These bars are loaded with marshmallows, chocolate, white chocolate, butterscotch, and caramel. They are super sweet and super delicious, just like the company we were keeping in that category alongside Bakerella and The Pioneer Woman Cooks. The winners were announced on August 5th, but honestly, we already felt like winners with a treat this good.
Why You’ll Love These Loaded Marshmallow Chocolate Butterscotch Bars
- Five different mix-ins create a candy-bar experience in every bite, with chewy caramel, creamy white chocolate, and rich semisweet chocolate all at once.
- The batter comes together in one bowl with a stand mixer, and the bars bake in about 35 minutes, making them a quick dessert for parties or bake sales.
- They are sturdy enough to pack for a picnic but fancy enough to serve at a holiday gathering.
Key Ingredients for Homemade Candy Bar Recipe
- Dark-brown sugar gives the bars a deep molasses flavor and a soft, chewy texture. Light brown sugar will work but the flavor will be milder.
- Soft caramel-candy cubes (like Kraft) melt into gooey pockets. If you can only find wrapped caramels, unwrap and cut them into small pieces before folding.
- Butterscotch chips add a buttery, toffee-like sweetness that balances the chocolate. You can substitute peanut butter chips for a different twist.
Kitchen Tools for Rocky Ledge Bars
- 9-by-13-inch baking pan, the standard size for this recipe; a different size will change baking time and thickness.
- Parchment paper, line the pan with a 2-inch overhang on the long sides to lift the bars out easily after refrigeration.
- Electric mixer with paddle attachment, for creaming the butter and sugar smoothly. A hand mixer works too, but the paddle attachment makes it easier.
- Wire cooling rack, for cooling the bars before refrigeration so they set evenly.
- Baking sheet, to hold the bars while they chill in the refrigerator.
Tips for Making the Best Rocky Ledge Bars
Line your pan with parchment paper and spray it well with cooking spray. This is the most important step for easy removal. The overhang on the longer sides gives you handles to lift the whole slab out after it chills. Don’t skip the refrigeration step. At least 30 minutes in the fridge firms up the bars so you can cut clean triangles or squares without the mix-ins crumbling out. To check doneness, insert a cake tester into the center. It should come out clean, and the top should be golden brown. If the tester has wet batter, bake another 2 to 3 minutes and check again.
Expert Tips for Perfect Loaded Marshmallow Chocolate Butterscotch Bars
If your caramel cubes are very sticky, pop them in the freezer for 10 minutes before folding them into the batter. This keeps them from clumping together and ensures they distribute evenly. When you spread the batter into the pan, use an offset spatula to push it into the corners. The batter is thick, so take your time. For the neatest cuts, use a sharp chef’s knife and wipe the blade clean with a damp paper towel between each slice. This prevents the sticky caramel and chocolate from smearing across the bars.
How to Keep Mix-Ins from Sinking in Rocky Ledge Bars
The batter for these bars is thick enough to hold most of the mix-ins in place, but if you want extra insurance, toss the caramel cubes and chips in a tablespoon of all-purpose flour before folding them in. This light coating helps them stay suspended during baking. Also, fold the mix-ins gently and stop as soon as they are evenly distributed. Overmixing can break down the batter and cause the heavier pieces to sink to the bottom.
Rocky Ledge Bars Variations to Try
You can easily change up the mix-ins to suit your taste. Swap the semisweet chocolate chips for milk chocolate or dark chocolate chunks. Replace the butterscotch chips with peanut butter chips for a different flavor profile. For crunch, fold in a half cup of chopped pecans or walnuts along with the other mix-ins. If you need a gluten-free version, use a 1-to-1 gluten-free flour blend in place of the all-purpose flour. The texture will be slightly more tender, but the bars will still hold together well.
What to Serve with Rocky Ledge Bars
These bars are sweet enough to stand alone, but a glass of cold milk is the classic companion. For a more indulgent dessert, warm a bar for 10 seconds in the microwave and top it with a scoop of vanilla ice cream. The contrast of cold, creamy ice cream against the chewy, gooey bar is hard to beat. If you want to cut the sweetness, serve them alongside fresh raspberries or sliced strawberries. They also make a great addition to a cookie platter for parties or bake sales.
How to Store Leftover Rocky Ledge Bars
Store the bars in an airtight container at room temperature for up to 3 days. If your kitchen is warm, refrigerate them instead; they will keep for up to a week. The bars are very sweet and stay moist, so they don’t dry out quickly. Just make sure the container is sealed tightly to prevent them from absorbing other odors in the fridge.
Can You Freeze Rocky Ledge Bars?
Yes, these bars freeze beautifully. After cutting them into pieces, wrap each bar individually in plastic wrap, then place them in a freezer-safe bag or container. They will keep for up to 3 months. To thaw, let them sit at room temperature for about 30 minutes, or microwave a frozen bar for 15 to 20 seconds for a warm, gooey treat.
How to Reheat Rocky Ledge Bars
If you prefer your bars warm and slightly melty, reheat them gently. Microwave a single bar on a plate for 10 to 15 seconds. For a larger batch, place the bars on a baking sheet in a 300°F oven for 5 minutes. Be careful not to overheat, or the marshmallows can become too soft and the caramel may run. The bars are also delicious straight from the fridge or at room temperature, so reheating is entirely optional.
Rocky Ledge Bars FAQs
Can I use salted butter instead of unsalted?
Yes, you can. Just reduce the added coarse salt to 1/2 teaspoon to keep the overall salt level balanced. The bars will still taste great.
Can I omit the white chocolate or butterscotch chips?
Absolutely. You can replace them with additional semisweet chocolate chips, milk chocolate chips, or even chopped nuts. The flavor will change, but the bars will still be delicious.
Why did my bars turn out dry?
Dry bars usually mean they were overbaked. Start checking at the 30-minute mark. The top should be golden brown and a cake tester inserted in the center should come out clean. If the tester is dry but the bars feel firm, they are done. Remember they continue to set as they cool.
Can I use a different pan size?
I don’t recommend it. A different size will change the thickness and baking time. If you use a smaller pan, the bars will be thicker and need more time. A larger pan will make them thinner and bake faster. Stick with a 9-by-13-inch pan for the best results.
