Why These Chewy Chunky Blondies Are My Go-To Blondie Recipe
I’ve made a lot of blondie recipes over the years, but these chewy chunky blondies from Dorie Greenspan are the ones I keep coming back to. The combination of bittersweet chocolate, butterscotch chips, walnuts, and coconut gives them a texture and flavor that’s unique. They’re sturdy enough to pack in a lunchbox but tender and buttery enough to feel like a treat.
What Makes This Easy Blondie Recipe Special
- Three kinds of mix-ins, chocolate, butterscotch, and coconut, create a complex flavor in every bite.
- The recipe uses a simple one-bowl method with a stand mixer, so cleanup is quick.
- It makes 32 bars, perfect for bake sales, parties, or freezing for later.
Key Ingredients for These Chunky Blondies
- Butter: Use unsalted butter so you control the salt level. Creaming it with the sugars creates the structure for a chewy texture.
- Light brown sugar: The molasses in brown sugar adds moisture and a deep caramel flavor that’s essential to blondies. Don’t substitute with white sugar alone.
- Bittersweet chocolate: A 6-ounce bar, chopped, gives you irregular chunks that melt into gooey pockets. Avoid chocolate chips if you want that effect, they hold their shape more.
Kitchen Tools for Making Blondies
- Stand mixer with paddle attachment (or hand mixer)
- 9×13-inch baking pan
- Baking sheet (to place the pan on for even heat distribution)
- Rubber spatula
- Wire cooling rack
Tips for Making the Best Chewy Chunky Blondies
When you beat the butter and sugars together for a full 3 minutes, you’re incorporating air that helps the blondies rise just a little and gives them a tender crumb. Don’t rush this step. For the doneness test, a knife inserted in the center should come out clean, but if you prefer a fudgier texture, pull them out a minute or two early. The edges will pull away from the pan and the top will turn a deep honey brown. Let them cool in the pan for 15 minutes before turning out, then cool completely right side up on a rack. This prevents them from breaking apart.
Expert Tips for Dorie’s Blondie Recipe
For the best flavor, use a good-quality bittersweet chocolate (around 60-70% cacao) and chop it yourself rather than using chocolate chips. The irregular pieces melt into pockets throughout the batter. If you have time, toast the walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant, it deepens their nutty flavor. Make sure your eggs are at room temperature so they emulsify smoothly into the butter-sugar mixture.
How to Cut Clean Blondie Bars
Once the blondies are completely cool, use a long, sharp chef’s knife to cut them into 32 bars. For the cleanest cuts, wipe the blade with a damp paper towel between each slice. If the bars are sticking, chill them in the refrigerator for 15 minutes first, the firmer texture makes cutting easier. Measure carefully: each bar should be about 2-1/4 by 1-1/2 inches.
Blondie Recipe Variations to Try
You can swap the butterscotch chips for white chocolate chips or Heath Toffee Bits (the recipe already lists toffee bits as an option). Pecans work well in place of walnuts, and if you’re not a coconut fan, simply leave it out, the blondies will still be delicious. For a gluten-free version, substitute the all-purpose flour with a 1:1 gluten-free baking blend. A sprinkle of flaky sea salt on top before baking adds a nice salty contrast to the sweet, buttery base.
How to Serve These Chocolate Chip Blondies
These blondies are wonderful on their own, but a scoop of vanilla ice cream turns them into an easy dessert. For a coffee break, pair a bar with a latte or a cold glass of milk. If you’re serving them at a party, cut them into smaller squares and arrange on a platter with fresh berries for color.
How to Store Leftover Blondies
Store the blondies in an airtight container at room temperature for up to 5 days. If your kitchen is warm, you can refrigerate them, but bring them to room temperature before serving for the best texture. Layer them between sheets of wax paper to prevent sticking.
Can You Freeze These Butterscotch Blondies?
To freeze, wrap the cooled, cut blondies individually in plastic wrap, then place them in a freezer-safe bag or container. They’ll keep for up to 3 months. Thaw at room temperature for about 30 minutes, or pop one in the microwave for 10-15 seconds if you want it warm.
Best Way to Reheat Blondies
If you like your blondies warm, microwave a single bar for 10-15 seconds. For a larger batch, reheat them in a 300°F oven for 5 minutes, this restores some of the fresh-baked texture without drying them out.
Frequently Asked Questions About This Blondie Recipe
Why does this recipe use both baking powder and baking soda?
Baking soda needs an acid to activate, and brown sugar provides that acidity. Baking powder adds extra lift. Together they give the blondies a balanced rise and a tender crumb without being cakey.
Can I use milk chocolate instead of bittersweet?
You can, but the blondies will be much sweeter. Bittersweet chocolate (60-70% cacao) balances the sweetness from the brown sugar and butterscotch chips. If you use milk chocolate, consider reducing the sugar slightly.
Can I omit the coconut?
Yes, the coconut adds chewiness and a subtle sweetness, but the blondies will still be great without it. You can replace it with an extra 1/2 cup of nuts or chocolate chips.
How do I know when the blondies are done?
Insert a knife into the center, it should come out clean. The edges will pull away from the pan, and the top will be a honey brown. If you prefer a fudgier center, bake for 35 minutes instead of 40.

Dorie's Chewy Chunky Blondies

Ingredients
- 2 cup all-purpose flour
- 0.75 tsp baking powder
- 0.5 tsp baking soda
- 0.5 tsp salt
- 2 stick unsalted butter, at room temperature
- 1.5 cup light brown sugar, packed
- 0.5 cup sugar
- 2 large eggs
- 1 tsp vanilla extract, pure
- 6 oz bittersweet chocolate, chopped into chips
- 1 cup butterscotch chips or Heath Toffee Bits
- 1 cup walnuts, coarsely chopped
- 1 cup sweetened shredded coconut
Instructions
- 1
Center a rack in the oven and preheat the oven to 325 degrees F. Butter a 9x13-inch baking pan and put it on a baking sheet.
- 2
Whisk together the flour, baking powder, baking soda and salt.
- 3
Working with a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, beat the butter on medium speed until smooth and creamy. Add both sugars and beat for another 3 minutes, or until well incorporated. Add the eggs one by one, beating for 1 minute after each addition, then beat in the vanilla. Reduce the mixer speed to low and add the dry ingredients, mixing just until they disappear into the batter. Using a rubber spatula, stir in the chips, nuts and coconut. Scrape the batter into the buttered pan and use the spatula to even the top as best you can.
- 4
Bake for about 40 minutes, or until a knife inserted into the center of the blondies comes out clean. The blondies should pull away from the sides of the pan a little and the top should be a nice honey brown. Transfer the pan to a rack and cool for about 15 minutes before turning the blondies out onto another rack. Invert onto a rack and cool the blondies to room temperature right side up.
- 5
Cut into 32 bars, each roughly 2-1/4 x 1-1/2 inches.
