A Fall Dessert That Comes Together in One Bowl
I’m not usually a frosting person, I scrape it off most cakes. So when I find a cake that’s beautiful enough to serve bare, I get excited. This pumpkin chocolate chip bundt cake fits the bill. The pumpkin spice cake is incredibly moist thanks to buttermilk and canned pumpkin, and those chocolate chunks? They melt into little pockets of rich, milky sweetness. I brought this to a fall gathering last weekend, and everyone went back for seconds. Even my friend who claims she’s “not a pumpkin person” asked for the recipe. It’s that good.
What Makes This Pumpkin Bundt Cake a Winner
- No frosting required. The cake is stunning on its own with just a dusting of powdered sugar, but you can add a glaze or ganache if you want.
- The chocolate chunks add texture and balance the warm spices. I use chopped milk chocolate bars, but dark chocolate works too.
- It’s an easy dessert for fall gatherings. The batter comes together quickly, and the bundt pan does all the decorative work.
Key Ingredients for Moist Pumpkin Spice Cake
- Canned pumpkin: Use solid-pack pumpkin, not pumpkin pie filling. It provides moisture and a deep, earthy flavor. One 15-ounce can holds about 1⅔ cups, so one can is more than enough.
- Buttermilk: Adds tangy richness and helps activate the baking soda for rise. If you don’t have buttermilk, you can make a quick substitute by adding 1 tablespoon of lemon juice or vinegar to ¾ cup of milk.
- Chocolate chunks: I prefer chopped milk chocolate bars for a creamy texture, but chocolate chips work fine. For a more intense chocolate flavor, use semisweet or dark chocolate.
Tools You’ll Need for This Bundt Cake
- 10-inch bundt pan: The classic shape is perfect for this cake. Make sure it’s light-colored; dark pans can cause over-browning.
- Electric mixer: A stand mixer or hand mixer makes creaming butter and sugar easy. You can do it by hand, but it takes elbow grease.
- Mixing bowls: At least two medium bowls for dry and wet ingredients.
Tips for the Best Pumpkin Chocolate Chip Cake
Don’t overmix the batter once you add the flour and pumpkin mixtures. Stir just until combined, overmixing can make the cake tough. After spooning the batter into the bundt pan, pound the pan gently on the counter to settle it and eliminate air pockets. To check doneness, insert a toothpick into the center; it should come out clean or with a few moist crumbs. If the top is browning too quickly, tent the pan with foil for the last 10 minutes.
Pro Tips for a Perfectly Moist Bundt Cake
For the most tender crumb, make sure your eggs and butter are at room temperature before you start. Cold ingredients don’t emulsify as well, which can affect texture. If you don’t have buttermilk on hand, you can substitute by adding 1 tablespoon of lemon juice or vinegar to ¾ cup of milk and letting it sit for 5 minutes. When you invert the cake onto a rack, let it cool in the pan for exactly 15 minutes, too long and it may stick, too short and it might break apart.
Easy Variations to Try
Swap the milk chocolate chunks for semisweet or dark chocolate if you prefer a less sweet cake. You can also add ½ cup of toasted pecans or walnuts for crunch. For a dairy-free version, use plant-based butter and buttermilk substitute (like almond milk with lemon juice). If you want a gluten-free cake, replace the all-purpose flour with a 1-to-1 gluten-free baking blend, just be sure it contains xanthan gum for structure.
How to Serve This Bundt Cake
A dusting of powdered sugar is all this cake needs, but a drizzle of simple glaze or chocolate ganache takes it over the top. For a little extra indulgence, serve slices with a scoop of vanilla ice cream or a dollop of whipped cream. The cake also pairs beautifully with a hot cup of coffee or spiced cider, perfect for a cozy fall afternoon.
How to Store Leftover Pumpkin Bundt Cake
Keep the cake in an airtight container at room temperature for up to 3 days. If your kitchen is warm or humid, refrigerate it instead, just bring slices to room temperature before serving for the best texture. The cake actually gets more moist on the second day as the flavors meld.
Can You Freeze This Pumpkin Chocolate Chip Cake?
Yes, it freezes well. Wrap the fully cooled cake (or individual slices) tightly in plastic wrap, then aluminum foil. Freeze for up to 3 months. To thaw, let it sit at room temperature for about 2 hours (slices in 30 minutes). Unwrap before thawing to avoid condensation making the surface soggy.
How to Reheat Frozen or Refrigerated Slices
If you prefer the cake warm, microwave a slice for 15-20 seconds or heat it in a 300°F oven for 5-10 minutes. Be careful not to overheat or it will dry out. For a faster option, pop the slice in a toaster oven at 300°F for a few minutes.
Frequently Asked Questions About This Bundt Cake
Can I use pumpkin pie filling instead of pure pumpkin?
No, pumpkin pie filling contains sugar and spices already, which will throw off the sweetness and texture. Always use 100% pure canned pumpkin (not pumpkin pie mix).
What if I don’t have a bundt pan?
You can bake this batter in two 9-inch loaf pans or a 10-inch tube pan. The baking time will be roughly the same, but start checking at 40 minutes. Grease and flour the pan well regardless.
Can I skip the chocolate chunks?
Yes, you can leave them out for a plain pumpkin spice cake. If you do, consider adding ½ cup of chopped nuts or dried cranberries for texture.
Why did my cake stick to the pan?
Bundt pans need thorough greasing. Use a pastry brush to coat every crevice with softened butter or nonstick spray, then dust with flour. Even with nonstick pans, this step is crucial. Also, let the cake cool exactly 15 minutes before inverting.
Can I make this cake gluten-free?
Yes, substitute the all-purpose flour with a 1-to-1 gluten-free baking blend that contains xanthan gum. The texture will be slightly denser but still delicious.
