How This Smoky Guacamole Became My Go-To Summer Appetizer
I first made this grilled guacamole on Memorial Day weekend after a morning of yard work. My husband Josh was ready to fire up the grill, and I was craving avocados, pregnancy will do that to you. We threw the halved avocados on the grates for about 5-7 minutes, just until they got those black char marks. The smoky flavor that came through was incredible. Mixed with lime, garlic, onion, tomato, cilantro, and jalapeno, it became the creamiest, most flavorful guacamole dip I’d ever made. Now it’s our go-to summer appetizer.
Why You’ll Love This Grilled Guacamole
- You get a deep smoky flavor that raw avocados just can’t deliver.
- The grilling step is quick, only 5-7 minutes, so this easy guacamole recipe is still fast.
- The creamy guacamole texture with those charred flecks makes every bite interesting.
Key Ingredients for Smoky Guacamole
- Avocados: Look for avocados that yield slightly to gentle pressure but aren’t mushy. Overripe avocados will fall apart on the grill. Hass avocados work best for their creamy texture.
- Lime juice: Fresh lime juice makes a big difference. Bottled juice lacks brightness. You’ll need about 1 lime for this recipe.
- Jalapeno: For a milder guacamole, remove the seeds and white membrane. Leave them in for more heat. You can substitute serrano for a spicier kick.
Kitchen Tools for Grilled Avocado Dip
- Grill (gas or charcoal), medium heat
- Tongs, for flipping avocado halves
- Basting brush, to lightly coat avocados with olive oil
Tips for Making the Best Grilled Guacamole
When you grill the avocados, look for distinct black grill marks, that’s your cue they’re ready. Don’t walk away; 5-7 minutes is all it takes. Let them cool completely before scooping out the flesh; hot avocado will turn mushy and lose that nice texture. I like to smash with a fork so there are still some small chunks, but you can mash it smoother if you prefer. Taste the guacamole before adding extra salt, the char adds a subtle saltiness on its own. If you want more heat, leave the seeds in the jalapeno. For a milder dip, remove them.
Grilled Guacamole Variations to Try
If you want a sweeter twist, fold in some diced mango or pineapple after mashing. Not a cilantro fan? Swap in fresh parsley or even mint for a different herb note. For more heat, use a serrano pepper instead of jalapeno, or add a pinch of cayenne. This recipe is naturally dairy-free and gluten-free, so it works for most diets.
What to Serve with Smoky Guacamole
Serve this grilled avocado dip with sturdy tortilla chips, the smoky flavor stands up to thick chips. It also works great as a topping for grilled chicken tacos or spooned over a burger. For a summer appetizer spread, set it out alongside fresh salsa and a bowl of chilled margaritas.
How to Store Leftover Grilled Guacamole
Store leftover guacamole in an airtight container with a layer of plastic wrap pressed directly onto the surface to prevent browning. It will keep in the fridge for up to 2 days. A little extra lime juice helps slow oxidation, but the color may darken slightly, that’s fine, just stir before serving.
Can You Freeze Grilled Guacamole?
You can freeze this grilled guacamole, but the texture will be softer after thawing. For best results, leave out the tomatoes and cilantro before freezing. Spoon the mashed avocado mixture into a freezer-safe bag, press out air, and freeze for up to 3 months. Thaw in the fridge overnight, then stir in fresh tomatoes and cilantro before serving.
Grilled Guacamole FAQs
Can I use a grill pan instead of an outdoor grill?
Yes, a grill pan works well. Heat it over medium-high heat and lightly oil the pan. Grill the avocado halves flesh side down for about 5-7 minutes, just like on an outdoor grill. You’ll still get nice char marks and smoky flavor.
Do I need to peel the avocados before grilling?
No, leave the skin on. Grill the halves with the skin side up. The skin protects the flesh and makes it easy to scoop out after grilling. Just brush the cut side with olive oil before placing it on the grates.
Can I make this guacamole ahead of time?
You can grill the avocados up to a day ahead and refrigerate them whole (with skin on). When ready to serve, scoop out the flesh and mix with the other ingredients. The guacamole itself is best eaten within a few hours of mixing for the freshest flavor and color.
Can I use this grilled guacamole as a spread for sandwiches?
Absolutely. The smoky flavor adds a great kick to turkey or veggie sandwiches. Spread it on bread or use it in place of mayonnaise. It also works well as a topping for grilled fish or steak.
