How These Cinnamon Sugar Tortilla Bowls Became a Family Favorite
Crispy, cinnamon-scented tortilla bowls that you can eat along with your ice cream. That’s the idea behind these cinnamon sugar tortilla ice cream bowls. July is National Ice Cream Month, and these bowls are a fun way to celebrate. My sister-in-law Whitney made them for dessert one night, and we’ve been making them ever since. My husband Josh isn’t usually a big ice cream eater, but he’s been asking for it a lot lately, as long as it comes in one of these sweet, crunchy bowls.
Why You’ll Love These Homemade Ice Cream Bowls
- You can eat the bowl, no waste, and it adds a sweet, crunchy contrast to the cold ice cream.
- Only four ingredients you probably already have in your kitchen: tortillas, butter, cinnamon, and sugar.
- The bowls bake up perfectly crispy in about 20 minutes, with no deep frying needed.
Key Ingredients for Easy Ice Cream Bowls
- Flour tortillas: Standard 8-inch flour tortillas work best. Corn tortillas are too small and stiff to form bowls. Look for soft, pliable tortillas that won’t crack when pressed into the ramekins.
- Butter: Salted or unsalted both work. Let it soften slightly at room temperature so it spreads easily without tearing the tortillas.
- Cinnamon and sugar: The recipe uses 1.5 tablespoons cinnamon to 1/4 cup granulated sugar. You can adjust the ratio to your taste, but this gives a strong cinnamon flavor that pairs well with ice cream.
Kitchen Tools for Cinnamon Sugar Tortilla Bowls
- 6 (8-ounce) ramekins or oven-safe bowls
- Baking sheet (to hold the ramekins)
- Wire cooling rack
- Small bowl for mixing cinnamon and sugar
- Pastry brush (optional, for spreading butter)
Tips for Making Crispy Tortilla Bowls
Butter both sides of each tortilla thoroughly, a thin, even layer helps the cinnamon sugar stick and promotes even browning. Press the tortillas gently into the ramekins, making sure they reach the bottom and sides. They’ll fan out at the top, which is exactly what you want. Bake until golden brown and crisp, 17 to 20 minutes. Let them cool in the ramekins for 2 minutes, then transfer to a wire rack to cool completely before filling. If you fill them while they’re still warm, the ice cream will melt too quickly.
Cinnamon Sugar Tortilla Bowl Variations to Try
For a deeper flavor, swap the granulated sugar for brown sugar. Add a pinch of nutmeg or cardamom to the cinnamon mixture for a warm spice twist. If you want a chocolate version, dust the buttered tortillas with a mix of cocoa powder and sugar before baking. You can also fill the bowls with frozen yogurt, sorbet, or even pudding for a different dessert. For a savory-sweet option, skip the cinnamon and use a little salt and pepper, then fill with ice cream and drizzle with honey.
What to Serve with Tortilla Ice Cream Bowls
Vanilla ice cream is a classic choice, but chocolate, strawberry, or coffee all work well. Top with fresh berries like raspberries, blueberries, or sliced strawberries. A drizzle of chocolate sauce, caramel, or honey adds extra sweetness. A dollop of whipped cream and a sprinkle of extra cinnamon sugar finish it off nicely.
How to Store Leftover Tortilla Bowls
Store any leftover baked bowls in an airtight container at room temperature for up to 2 days. They will lose some crispness over time, so it’s best to fill them just before serving. Do not refrigerate the bowls, as moisture will make them soggy.
Best Way to Reheat Tortilla Bowls
If the bowls have softened, you can re-crisp them. Place them on a baking sheet in a 350°F oven for 3 to 5 minutes. Let them cool completely before filling with ice cream again. Do not microwave, as that will make them chewy.
Cinnamon Sugar Tortilla Ice Cream Bowls FAQs
Can I use corn tortillas instead of flour?
Corn tortillas are smaller and less pliable, so they won’t form a bowl shape as easily. They also have a different flavor that may not pair as well with the cinnamon sugar. Stick with flour tortillas for the best results.
Can I make the bowls ahead of time?
Yes, you can bake the bowls ahead of time. Store them in an airtight container at room temperature. If they soften, re-crisp them in a 350°F oven for a few minutes before filling.
How do I keep the bowls from getting soggy?
Make sure the bowls are completely cool before adding ice cream. Also, serve immediately after filling. If you need to hold them, keep the bowls and ice cream separate until serving.
Can I use a different size ramekin?
Yes, but adjust the baking time. Smaller ramekins will produce thinner bowls that may bake faster; larger ones will need a few extra minutes. Keep an eye on the color and crispness.
