Why This Brussels Sprout Salad Became My Go-To Winter Lunch
We’re heading to Hawaii next week, and I’m thrilled about the beach and sun. But getting into a swimsuit after months of cozy layers? That’s a different story. To help me feel a little more swimsuit-ready, I’ve been eating this Brussels Sprout Pomegranate Citrus Salad almost every day. It’s fresh, light, and surprisingly filling. The chopped brussels sprouts give a satisfying crunch that plain lettuce just can’t match, and the sweet-tart citrus dressing ties everything together. Plus, it comes together in minutes, no whining about seeding pomegranates because I use POM POMS, those ready-to-eat arils that make life so much easier.
3 Reasons This Salad Wins Every Time
- Crunchy base that doesn’t get soggy. Shredded brussels sprouts hold up to the dressing way better than lettuce, so you can even make it a few hours ahead without it turning into a sad, wilted mess.
- No pomegranate mess. POM POMS are already seeded and ready to go, just open the package and sprinkle them on. No red-stained fingers or countertops.
- Bright, balanced flavor. The citrus dressing is tangy and sweet, the avocado adds creaminess, and the pomegranate arils pop with tartness. Every bite is different.
Key Ingredients for a Great Brussels Sprout Salad
- Brussels sprouts: Look for firm, bright green sprouts with tightly packed leaves. Avoid any that are yellowing or have loose leaves. Pre-shredded bags work in a pinch, but the texture won’t be as fine.
- Pomegranate arils: POM POMS are the easiest option, they’re already seeded and stay crisp. If you seed your own pomegranate, do it in a bowl of water to avoid splatters.
- Oranges: Use navel or cara cara oranges for the juice and zest. They’re sweet and not too acidic. Roll the orange on the counter before juicing to get more juice out.
Kitchen Tools for This Easy Salad
- Sharp chef’s knife, essential for thinly slicing the brussels sprouts without crushing them.
- Large mixing bowl, big enough to toss everything without spilling.
- Small bowl and whisk, for the citrus dressing. A fork works in a pinch.
- Citrus zester or microplane, to get the orange zest without the bitter white pith.
Tips for the Best Chopped Brussels Sprout Salad
To get those thin, slaw-like shreds, use a sharp chef’s knife and slice the brussels sprouts as thinly as you can. After slicing, run your fingers through the pile to separate the leaves, this makes the texture more delicate and helps the dressing coat every piece. If you’re short on time, you can buy pre-shredded brussels sprouts, but they’ll be a little chunkier.
Pick an avocado that’s ripe but still firm, too soft and it’ll turn into mush when you toss the salad. The dressing can be whisked together up to a day ahead and stored in the fridge, but don’t dress the salad until you’re ready to serve. If you want to make it vegan, swap the honey for agave syrup, the recipe works perfectly either way.
Easy Ways to Change Up This Pomegranate Citrus Salad
Swap the orange for grapefruit or blood orange when they’re in season, the flavor gets a little more complex. Add a protein like shredded rotisserie chicken, cooked shrimp, or canned chickpeas to turn it into a full meal. For a nuttier crunch, use toasted pecans or slivered almonds instead of the avocado. And if you want to bulk it up with grains, toss in a cup of cooked quinoa or farro, it’ll still be light but more filling.
How to Serve This Healthy Winter Salad
This salad works as a light lunch on its own, but it’s also great alongside grilled chicken, salmon, or roasted tofu for a heartier meal. For extra crunch, sprinkle toasted almonds or pepitas on top right before serving. If you’re serving it as a side, pair it with something warm like roasted chicken thighs or a bowl of butternut squash soup, the contrast in temperatures is lovely.
How to Store Leftover Brussels Sprout Salad
If you have leftover salad that hasn’t been dressed yet, store it in an airtight container in the fridge for up to 2 days. Keep the avocado separate and add it just before serving to prevent browning. Once the dressing is mixed in, the salad is best eaten right away, the brussels sprouts will soften and the avocado will get mushy after a few hours.
Brussels Sprout Pomegranate Citrus Salad FAQs
Can I use frozen pomegranate arils instead of fresh POM POMS?
I don’t recommend it. Frozen arils release a lot of liquid when they thaw, which will make the salad watery. Fresh POM POMS are sold in the refrigerated section of the produce department and stay firm and juicy. If you can’t find them, seed a fresh pomegranate yourself.
Can I make this salad ahead of time?
You can prep the components ahead, shred the brussels sprouts, make the dressing, and seed the pomegranate, but keep everything separate. Combine the salad and dressing just before serving so the sprouts stay crunchy and the avocado doesn’t brown.
What can I use instead of honey in the dressing?
Agave syrup works perfectly as a 1-to-1 substitute. That swap also makes the salad vegan. Maple syrup would work too, but it has a stronger flavor that might compete with the citrus.
How do I keep the avocado from turning brown?
Toss the chopped avocado with a squeeze of lime or lemon juice before adding it to the salad. Or just add the avocado right before serving, the citrus dressing itself helps slow browning a little, but it’s not a guarantee.
