This easy whole wheat pizza dough recipe is our favorite! It’s healthy, freezer-friendly, and bakes into a tender crust. Top with your favorite toppings!

Vegetarian pairs well with Potato Rosemary Rolls, Peach, Basil, Mozzarella, & Balsamic Pizza, or BBQ Chicken French Bread Pizza too.

Why This Whole Wheat Pizza Dough Became Our Go-To

I realized the other day that I’d never shared our favorite whole wheat pizza dough recipe on the site. A friend asked for a good pizza dough, and I sent her our regular one. But I’d completely forgotten to post this whole wheat version. So we had a mandatory pizza night to photograph it and finally get it up. I’m sorry we kept it a secret this long!

This dough is incredibly forgiving. It comes together in a stand mixer, rises in just 30 minutes, and bakes into a crust that’s sturdy enough for heavy toppings but still tender. The whole wheat flour gives it a nutty, wholesome flavor that makes you feel good about eating pizza for dinner.

Why You’ll Love This Easy Whole Wheat Pizza Dough

  • It’s a one-bowl dough that comes together in minutes with a stand mixer. No complicated steps.
  • Whole wheat flour adds a hearty, nutty flavor that pairs well with any toppings, from classic pepperoni to roasted vegetables.
  • You can make a double batch and freeze one for later. It keeps for up to 3 months, so you’re always ready for pizza night.

Key Ingredients for Homemade Whole Wheat Pizza Dough

  • Whole wheat flour: gives the crust a nutty, hearty flavor. You can use white whole wheat flour for a milder taste. Look for fresh flour. Whole wheat can go rancid if stored too long.
  • Active dry yeast: needs to be proofed in warm water (105 to 115°F) with sugar. If you use instant yeast, you can skip proofing and mix it directly with the flour.
  • Honey: adds a touch of sweetness and helps browning. You can substitute maple syrup or agave nectar.

Kitchen Tools for Whole Wheat Pizza Dough

  • Stand mixer with dough hook makes kneading effortless. If you don’t have one, you can knead by hand for 8 to 10 minutes.
  • Pizza stone or baking sheet, a stone gives a crisper crust.
  • Pizza pan or peel for transferring the dough.

Tips for Making the Best Whole Wheat Pizza Dough

When you combine the warm water, yeast, and sugar, give it a full 5 to 10 minutes to foam. If it doesn’t bubble, your yeast might be old. Start over with fresh yeast. Once you add the flour, mix just until the dough comes together. Overmixing can make the crust tough. The 30-minute rise is enough for a thin, chewy crust. No need to wait hours.

Expert Tips for a Crispier Whole Wheat Pizza Crust

For a crispier bottom, preheat your pizza stone or baking sheet in the oven while it heats up. Slide the rolled dough onto the hot surface. If you’re using a pizza pan, you can skip this. Also, let the baked pizza rest for 5 minutes before slicing. That keeps the cheese from sliding off.

Whole Wheat Pizza Dough Variations to Try

Swap half the whole wheat flour for all-purpose if you want a lighter crust. Add dried herbs like oregano or rosemary to the dough for extra flavor. For a gluten-free version, use a 1-to-1 gluten-free flour blend, but note the texture will be different. You can also shape the dough into individual mini pizzas for a fun dinner.

What to Serve with Whole Wheat Pizza

Top this whole wheat crust with classic marinara and mozzarella, or go for a white pizza with ricotta, spinach, and garlic. For a side, a simple arugula salad with lemon vinaigrette cuts through the richness. If you’re feeding a crowd, serve it alongside a bowl of minestrone soup.

How to Freeze Whole Wheat Pizza Dough

After the dough rises, punch it down and shape it into a ball. Place it in a freezer-safe bag, squeeze out all the air, and seal. It will keep for up to 3 months. To use, thaw overnight in the fridge, then let it come to room temperature for about 30 minutes before rolling out.

Whole Wheat Pizza Dough FAQs

Can I use all-purpose flour instead of whole wheat?

Yes, you can substitute all-purpose flour for some or all of the whole wheat flour. The texture will be lighter and less dense. If you swap all of it, you may need to adjust the liquid slightly. Start with the same amount and add a tablespoon more if the dough feels dry.

Can I make this dough by hand without a stand mixer?

Absolutely. Mix the yeast mixture in a large bowl, then stir in the flour and other ingredients with a wooden spoon until a shaggy dough forms. Turn it out onto a floured surface and knead for 8 to 10 minutes until smooth and elastic.

Why didn’t my yeast foam?

The water temperature is important. It should be warm (105 to 115°F), not hot. If the water is too hot, it will kill the yeast. If it’s too cool, the yeast won’t activate. Also, check the expiration date on your yeast.

Can I use instant yeast instead of active dry?

Yes, you can use instant yeast. Skip the proofing step and mix it directly with the flour. You’ll still need the warm water, but you can add it with the other liquids. The rise time may be slightly shorter.

  • 1 tbsp olive oil
  • 1 tbsp honey

  2. 2

Using the dough hook, turn the mixer on low and slowly add half of the flour, olive oil, honey, and salt. When flour is combined, add the remaining flour. Once dough starts to form, increase speed to medium. Mix for 3-5 minutes, until dough is well combined.

  3. 3

  1. 4

When ready to bake, preheat oven to 450 degrees F. Roll dough into a 14 inch round. Place on a pizza pan or pizza stone. Spread with desired sauce and toppings. Bake for 16-20 minutes or until crust is golden brown. Remove pizza from oven and let cool for 5 minutes before slicing.

  2. 5

Note-this pizza dough freezes well. To freeze, place dough in freezer bag after it rises, making sure you squeeze out all of the air. Thaw before using. Will keep in the freezer for up to 3 months.
