Why This Summer Quinoa Bowl Is My Go-To Summer Salad

Every time I hit the farmers market in July, I come home with bags of peaches, corn, tomatoes, and cucumbers. I want to eat all of it at once, and this Summer Quinoa Bowl lets me do exactly that. I pile a bed of peppery arugula with fluffy quinoa, juicy peach slices, sweet raw corn, and creamy avocado, then drizzle it all with basil vinaigrette. It’s colorful, it’s healthy, and it tastes like the best parts of summer in one bowl. I seriously could eat this every single day, and I just might.

Reasons You’ll Love This Healthy Quinoa Bowl

  • No cooking required beyond the quinoa, just chop and assemble, so it’s ready in 15 minutes.
  • The combination of sweet corn, ripe peach, and tangy basil vinaigrette creates a flavor that’s both refreshing and satisfying.
  • It’s a complete vegetarian meal with protein from quinoa, healthy fats from avocado, and plenty of fresh vegetables.

Key Ingredients for This Easy Quinoa Bowl

  • Quinoa: Use any color, white, red, or tri-color. Rinse it before cooking to remove bitterness. Cook it in water or vegetable broth for extra flavor. Let it cool completely before adding to the bowl.
  • Peach: Look for peaches that are fragrant and give slightly at the stem. A ripe but firm peach holds its shape when sliced. Nectarines are a great substitute.
  • Fresh sweet corn: Raw corn straight from the cob is sweetest and adds a crisp texture. If corn isn’t in season, thawed frozen corn (drained and patted dry) works.
  • Avocado: Choose an avocado that yields to gentle pressure. Slice it just before serving and toss with lime juice to prevent browning.

Kitchen Tools for This Summer Salad

  • Medium mixing bowl
  • Chef’s knife and cutting board
  • Measuring cups
  • Jar with lid for the basil vinaigrette (if making from scratch)

Tips for Making the Best Summer Quinoa Bowl

Cook your quinoa ahead of time and let it cool completely before assembling the bowl. Warm quinoa will wilt the arugula and make the avocado mushy. I like to cook a big batch at the start of the week so I can throw this salad together in minutes. For the corn, use fresh raw kernels straight off the cob, they add a pop of sweetness and crunch that cooked corn just can’t match. If you can’t find fresh corn, thawed frozen corn works in a pinch, but pat it dry first to avoid watering down the dressing.

Expert Tips for a Perfect Quinoa Bowl Recipe

Choose peaches that are ripe but still firm, they should give slightly when pressed but not be mushy. A too-soft peach will fall apart in the bowl. When slicing avocado, cut it just before serving and toss it with a squeeze of lime juice to keep it from browning. For the basil vinaigrette, make it in a jar so you can shake it right before drizzling. The recipe makes more than you need for one bowl, so store the extra in the fridge for up to 5 days, it’s great on any summer salad.

Make-Ahead Tips for This Quinoa Bowl Recipe

I always cook extra quinoa at the beginning of the week so I can throw this bowl together in minutes. Store cooked quinoa in an airtight container in the fridge for up to 5 days. You can also wash and dry the arugula ahead of time, just keep it in a salad spinner or wrapped in paper towels in a bag. Slice the cucumber and tomatoes up to a day in advance, but wait to cut the peach and avocado until you’re ready to eat. The basil vinaigrette can be made up to 5 days ahead and stored in a jar in the fridge.

Summer Quinoa Bowl Variations to Try

Swap the arugula for spinach, kale, or mixed greens if you prefer a milder base. Nectarines or plums work just as well as peaches when they’re in season. For a heartier version, add a handful of black beans or chickpeas for extra fiber and protein. If you’re not vegetarian, grilled chicken, shrimp, or even crumbled bacon would be delicious. You can also change up the dressing, a lemon-herb vinaigrette or a simple balsamic would be lovely.

What to Serve with This Summer Quinoa Bowl

This bowl is hearty enough to stand alone as a lunch or light dinner, but it also pairs beautifully with grilled chicken or fish. Try it alongside a piece of lemon-herb salmon or some simple grilled shrimp skewers. If you want to add a little extra protein without meat, crumbled feta or goat cheese on top adds a salty tang that complements the sweet fruit. A slice of crusty bread on the side is never a bad idea either.

How to Store Leftover Summer Quinoa Bowl

This salad is best eaten right after assembling, but if you have leftovers, store the dressing separately and keep the salad in an airtight container in the refrigerator for up to 1 day. The avocado will start to brown, so it’s best to add fresh avocado when you’re ready to eat. The leftover basil vinaigrette keeps in a jar in the fridge for up to 5 days, just shake it before using.

Summer Quinoa Bowl FAQs

Can I use frozen corn instead of fresh?

Yes, thaw frozen corn and pat it dry with paper towels before adding to the bowl. Fresh raw corn is sweeter and crunchier, but frozen works well when corn isn’t in season.

Can I make this quinoa bowl ahead of time?

You can prep the components ahead, cook the quinoa, wash and chop the greens, slice the peach and cucumber, and make the vinaigrette. Store each separately in the fridge. Assemble the bowl just before serving to keep everything fresh and prevent the avocado from browning.

What can I use instead of quinoa?

Farro, couscous, brown rice, or even cooked lentils would work as a base. Adjust cooking times accordingly. The bowl will still be delicious with any grain.

Is this recipe gluten-free?

Yes, as long as you use certified gluten-free quinoa. All other ingredients are naturally gluten-free. Check the label on your vinaigrette if using store-bought.
