These come up often alongside this one: Skillet Chicken Thighs or Chicken Pesto Tortellini.

A One-Skillet Winner from Our Kitchen

My husband Josh and I spend a lot of time cooking together, and this creamy lemon rosemary chicken is one of his go-to recipes. He takes over when it’s on the menu, searing the chicken in a hot cast iron skillet before finishing it in the oven. The sauce, made with lemon, garlic, and cream, comes together in the same pan, so cleanup is easy. We serve it with rice and roasted broccoli, and it’s always a hit.

Why You’ll Love This Creamy Lemon Rosemary Chicken

  • One skillet from start to finish means less cleanup and more flavor.
  • Bright lemon and earthy rosemary make the sauce feel special, but it’s ready in about 30 minutes.
  • The chicken turns out tender and juicy every time, thanks to the stove-to-oven cooking method.

Key Ingredients for Skillet Creamy Lemon Rosemary Chicken

  • Lemons: Use two large lemons, one for zest and juice, the other sliced. Fresh lemon adds brightness that bottled juice can’t match.
  • Fresh rosemary: The recipe calls for chopped fresh rosemary. If you only have dried, use 1 teaspoon and add it with the broth.
  • Heavy cream: It gives the sauce its luscious texture. You can substitute half-and-half for a lighter sauce, but it won’t be as thick and may break more easily.

Essential Tools for This Skillet Chicken

  • Large ovenproof skillet (cast iron works perfectly for even heat and a good sear)
  • Meat pounder or rolling pin to flatten chicken to even thickness
  • Cutting board
  • Foil to tent the chicken while you make the sauce

Tips for the Best One-Skillet Chicken

Pound the chicken breasts to an even thickness so they cook uniformly, thicker parts will be underdone while thin bits dry out. After searing, let the chicken rest under foil while you build the sauce; this keeps it from overcooking. Be sure to scrape up all the browned bits from the skillet when you add the broth, that’s where most of the flavor lives. Reduce the sauce until it’s about 1/4 cup, then stir in the cream and butter off the heat to keep it from breaking.

Simple Variations to Try

If you don’t have fresh rosemary, substitute 1 teaspoon dried, just add it with the broth instead of later. For a lighter sauce, swap the heavy cream for half-and-half, though it won’t be as thick. You can also add a handful of fresh spinach right before serving; let it wilt in the hot sauce. Chicken thighs work in place of breasts, but increase the oven time by about 5 minutes to ensure they’re cooked through.

What to Serve with Creamy Lemon Rosemary Chicken

We almost always serve this chicken with fluffy white rice to soak up every drop of the creamy sauce. Roasted broccoli is our go-to vegetable, it’s simple and the slight char balances the richness. A crisp green salad with a lemon vinaigrette would also work well, or some crusty bread for dipping.

How to Store Leftover Chicken

Leftover chicken keeps in the fridge for up to 3 days. Store it in an airtight container with the sauce, or keep the sauce separate if you want to reheat it more gently. The flavor actually deepens overnight.

Can You Freeze This Chicken?

Yes, you can freeze the cooked chicken and sauce for up to 2 months. Thaw overnight in the fridge, then reheat gently on the stovetop or in the microwave. The sauce may separate slightly after thawing, just give it a good stir and add a splash of broth to bring it back together.

Best Way to Reheat Leftovers

For the best texture, reheat the chicken and sauce in a covered skillet over low heat, adding a tablespoon of broth or water to thin the sauce if needed. You can also use the microwave: cover the dish and heat in 30-second bursts, stirring the sauce between each. Avoid high heat or the sauce might break.

Frequently Asked Questions about This Chicken Recipe

Can I use dried rosemary instead of fresh?

Yes, substitute 1 teaspoon dried rosemary for the fresh tablespoon. Add it with the broth so it has time to rehydrate. The flavor will be slightly milder but still good.

Can I make this dairy-free?

You can replace the heavy cream with full-fat coconut cream and the butter with a dairy-free alternative. The sauce will be a bit thinner and have a hint of coconut, but it still works well.

How do I know when the chicken is done?

Use an instant-read thermometer; the chicken is done when it reaches 165°F in the thickest part. If you don’t have a thermometer, cut into the thickest piece, the juices should run clear and the meat should no longer be pink.

Can I use bone-in chicken?

Yes, but adjust cooking times. Sear bone-in pieces for about 5 minutes per side, then bake for 15-20 minutes, depending on size. Always check internal temperature.

Why did my sauce curdle?

Cream can curdle if added to boiling liquid or if the heat is too high. Make sure to reduce the heat to low before stirring in the cream and butter, and don’t let it boil after adding them.

Ingredients

Servings
  • 4 skinless boneless chicken breasts
  • salt and black pepper
  • 2 tbsp olive oil
  • 2 large lemons
  • 1 cup chicken broth
  • 0.333 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp rosemary, chopped
  • 0.25 cup heavy cream
  • 2 tbsp unsalted butter, cubed
  • rice for serving

Instructions

  1. 1

    Preheat oven to 350°F.

  2. 2

Place the chicken breasts on a cutting board and pound until they are the same size and thickness. You want the chicken breasts the same size so they will cook evenly. Season chicken with salt and pepper.

  3. 3

In a large ovenproof skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 4 minutes. Flip the chicken and cook for 4 more minutes. Remove the chicken from the skillet and place on a plate. Cover with foil and set aside. Note-the chicken should be browned, but not cooked all of the way. It will finish cooking in the oven.

  4. 4

Turn off the stove, but leave the skillet on the stove. Zest one of the lemons. Add the lemon zest to the skillet. Juice the lemon and add the juice to the skillet. Stir in the broth, onion, garlic, and rosemary. Slice the remaining lemon and add the lemon slices to the skillet.

  1. 5

Turn the stove to medium-high heat and cook, stirring the sauce to scrape up the browned bits from the bottom of the skillet. Bring the sauce to a boil. Gently boil for 8-10 minutes so the liquid can reduce to about 1/4 cup. Reduce heat to low and stir in the heavy cream and butter. Cook until the butter is melted, about 2 minutes.

  2. 6

Add the chicken breasts back to the skillet. Place the skillet in the oven and bake uncovered until the chicken is completely cooked through, about 8-10 minutes.

  3. 7

Remove skillet from the oven and serve chicken with sauce spooned on top. We like to serve the chicken and sauce with rice and roasted broccoli on the side.

  4. 8

Note-the chicken will keep in the refrigerator for up to 3 days. Reheat in the microwave.
