- 0.25 cup canola oil
- 0.25 cup freshly squeezed lemon juice
- 2 tbsp fresh rosemary leaves, roughly chopped
- 4 garlic cloves, smashed
- 2 tsp lemon zest
- 0.75 tsp cayenne pepper
- 1 tsp kosher salt
- 8 bone-in skin-on chicken thighs, skin removed

- 1.5 cup stone-ground cornmeal
- 0.75 cup crushed cornflakes
- 0.5 cup grated Pecorino cheese
- 0.25 cup canola oil
- 1 tbsp kosher salt
