How This Roasted Cauliflower Cheddar Soup Converted a Cauliflower Skeptic
This roasted cauliflower cheddar soup is the one that finally made my husband Josh admit he likes cauliflower. He’s always hated the stuff, but when I set a bowl of this in front of him, he finished every last spoonful. I had to feel his forehead to make sure he wasn’t sick. The soup tastes buttery and creamy, but there’s no butter or cream in it. Roasting the cauliflower until it’s golden brings out its natural sweetness, and blending it with vegetable broth and a touch of aged white cheddar creates a velvety texture that even our son Caleb couldn’t get enough of. If this soup can win over a cauliflower hater, it can win over anyone.
Why You’ll Love This Cauliflower Cheddar Soup
- Deep, caramelized flavor. Roasting the cauliflower at 400°F brings out its natural sweetness and adds a nutty, toasty note that you can’t get from boiling.
- Creamy texture without any cream. Blending the roasted cauliflower with broth creates a velvety smooth soup, and a little aged white cheddar adds richness without heaviness.
- Simple, wholesome ingredients. Just cauliflower, garlic, onion, celery, fresh herbs, and a bit of cheese, no heavy cream or butter needed.
Key Ingredients for Roasted Cauliflower Cheddar Soup
- Cauliflower: A 1.5-pound head yields about 4-5 cups of florets. Roasting at 400°F brings out its natural sweetness and prevents the soup from tasting watery. Look for a firm, white head with no brown spots.
- White cheddar cheese: Aged white cheddar has a sharper flavor, so you can use less and still get a strong cheesy taste. Shred it yourself from a block for better melting, pre-shredded cheese often contains anti-caking agents that can make the soup grainy.
- Fresh thyme and rosemary: Dried herbs won’t give the same bright flavor. If you must substitute, use about 1/3 the amount of dried, but fresh is really worth it here.
Kitchen Tools for Cauliflower Cheddar Soup
- Large baking sheet for roasting the cauliflower in a single layer
- Large saucepan or Dutch oven for simmering the soup
- Immersion blender (or regular blender) for pureeing
- Chef’s knife and cutting board for prepping vegetables
- Large bowl for tossing cauliflower with oil
Tips for Making the Best Roasted Cauliflower Cheddar Soup
Don’t skip roasting the garlic along with the cauliflower. Roasted garlic turns sweet and mellow, and it blends into the soup without any harsh bite. Make sure to spread the cauliflower in a single layer on the baking sheet so it browns evenly, not steams. If your cauliflower is crowded, it will get soft instead of caramelized. For the smoothest soup, use an immersion blender directly in the pot. If you’re using a regular blender, work in batches and don’t fill it more than halfway, and let the steam escape by removing the center cap and covering with a towel. Taste before adding extra salt, the vegetable broth and cheese both bring saltiness.
How This Soup Gets So Creamy Without Any Cream
The magic here is all in the roasting and blending. When cauliflower is roasted at 400°F, its cell walls break down and release natural starches, which thicken the soup as it simmers. The high heat also caramelizes the natural sugars, giving a deep, almost nutty flavor that mimics the richness of cream. Blending everything until completely smooth creates a velvety texture, and the small amount of aged white cheddar adds just enough fat and tang to make it feel indulgent. No cream, no butter, no heavy ingredients, just technique and good produce.
Easy Variations for Cauliflower Cheddar Soup
If you want a little heat, stir in a pinch of red pepper flakes or a dash of smoked paprika along with the herbs. For a dairy-free version, skip the cheddar and add a tablespoon of nutritional yeast for a cheesy flavor, or use a dairy-free cheddar alternative. You can also swap the white cheddar for sharp yellow cheddar or even Gruyère for a nuttier taste. To make the soup heartier, add a peeled and diced potato along with the cauliflower when simmering, it will break down and add body without changing the flavor much.
What to Serve with Roasted Cauliflower Cheddar Soup
I like to serve this soup with a simple green salad dressed with lemon vinaigrette to cut through the richness. Crusty bread is a must for dipping, or you can make homemade croutons from leftover bread, just toss cubes with olive oil and herbs and bake until crisp. A sprinkle of extra shredded white cheddar and a few fresh thyme leaves on top make it look pretty.
How to Store Leftover Cauliflower Cheddar Soup
Let the soup cool completely, then transfer it to an airtight container. It will keep in the refrigerator for up to 4 days. The soup may thicken as it sits; just stir in a splash of vegetable broth or water when reheating to bring it back to the right consistency.
Can You Freeze Cauliflower Cheddar Soup?
Yes, this soup freezes well. Cool it completely, then pour it into freezer-safe containers or zip-top bags, leaving about an inch of headspace for expansion. Freeze for up to 3 months. Thaw overnight in the refrigerator before reheating. The texture may be slightly thinner after freezing, so give it a good stir and add a little extra cheese if you want to boost the creaminess.
Best Ways to Reheat Cauliflower Cheddar Soup
Reheat the soup gently on the stovetop over medium-low heat, stirring occasionally, until warmed through. If it’s too thick, add a splash of broth or milk. You can also microwave individual portions in 30-second bursts, stirring between each, but the stovetop gives a more even result. Avoid boiling, as that can cause the cheese to separate.
Roasted Cauliflower Cheddar Soup FAQs
Can I use frozen cauliflower instead of fresh?
Yes, but you’ll need to thaw and pat it dry first, and it may not brown as well. Roast it a little longer to get some color.
Is this soup gluten-free?
As written, yes, as long as your vegetable broth is gluten-free. Serve with gluten-free bread or croutons if needed.
Can I make this soup dairy-free?
You can omit the cheddar cheese and add a tablespoon of nutritional yeast for a cheesy flavor, or use a dairy-free shredded cheese. The soup will still be creamy from the blended cauliflower.
Why did my soup turn out thin?
Make sure you simmer the cauliflower until very tender (20-25 minutes) so it breaks down fully when blended. If it’s still thin, you can simmer it a bit longer to reduce, or add a small cooked potato to thicken.

- 1 onion, diced
- 2 ribs celery, diced
- 3.5 cup vegetable broth
- 2 tsp fresh thyme, chopped
- 1 tbsp fresh rosemary, chopped
- 0.5 cup white cheddar cheese, shredded
- to taste salt and freshly ground black pepper

- 2 tbsp olive oil

- 1 tbsp olive oil
Instructions
- 1
Preheat the oven to 400 degrees F. In a large bowl, toss the cauliflower and garlic cloves in the olive oil until well coated. Season with salt and pepper, to taste. Place on a large baking sheet, in a single layer. Roast the cauliflower until lightly golden brown, about 20-30 minutes. Set aside.
- 2
Heat the olive oil in a large sauce pan over medium heat, add the onion and celery and saute until tender, about 5-7 minutes. Chop up the roasted garlic. Add the garlic, roasted cauliflower, vegetable broth, thyme, and rosemary and bring to a boil. Reduce the heat so that the mixture simmers and cook until the cauliflower is tender, about 20-25 minutes.
- 3
Using an immersion blender (or in batches in a blender or food processor), blend the soup until smooth. Add the cheddar cheese and stir until melted. Season with salt and pepper and remove from heat. Ladle the soup into bowls and serve warm. We like to serve the soup with crusty bread or homemade croutons.
