Why This Roasted Asparagus Recipe Is My Go-To Spring Side
There’s something about spring that makes me crave all things green. So on St. Patrick’s Day, I double down. My boys wore green pajamas to avoid getting pinched, I loaded up on green smoothies and avocado sandwiches, and for dinner I made avocado mac and cheese with a side of this roasted asparagus. I actually bought two bunches at Smith’s because they looked so perfect, one for this recipe and one for a spring quinoa salad later. To me, a beautiful bunch of asparagus is as exciting as a bouquet of flowers.
3 Reasons to Make This Lemon Feta Asparagus
- The bright lemon and salty feta create a tangy contrast to the charred, tender asparagus.
- Crunchy pistachios add a buttery texture that makes this side feel special.
- It comes together in 20 minutes with minimal prep and only one baking sheet.
Key Ingredients for the Best Oven Roasted Asparagus
- Asparagus: Look for firm, bright green spears with tightly closed tips. Thicker spears hold up better to roasting and have a meatier texture.
- Lemon: Always use fresh lemon juice and zest. Bottled juice lacks the brightness you need to balance the richness of the feta and pistachios.
- Feta: A good quality, creamy feta crumbles easily and softens slightly in the oven. For a milder flavor, try goat cheese.
Kitchen Tools for Roasted Asparagus with Lemon, Feta, and Pistachios
- Rimmed baking sheet (catches any drips and allows even heat)
- Chef’s knife (if you prefer to trim the ends instead of snapping)
- Microplane or zester (for fresh lemon zest)
Tips for Perfect Oven Roasted Asparagus Every Time
To get the best texture, snap off the woody ends where the asparagus naturally breaks rather than cutting them. Roast until just tender but still bright green, checking at 12 minutes if your spears are thin. Don’t overcrowd the pan; a single layer ensures even browning and prevents steaming. If you like crispier asparagus, leave it in a few extra minutes, but keep an eye on it so it doesn’t turn mushy.
Delicious Variations for This Easy Asparagus Recipe
Swap the feta for crumbled goat cheese or shaved parmesan for a different tang. Use almonds or walnuts instead of pistachios if that’s what you have. Add a drizzle of balsamic glaze before serving for extra sweetness. To make it vegan, omit the cheese or use a plant-based feta alternative. You can also toss in a pinch of red pepper flakes for heat.
What to Serve with Roasted Asparagus with Lemon, Feta, and Pistachios
This asparagus pairs beautifully with roasted chicken or seared salmon. It also works as a side for lemon-herb pasta or a simple frittata. For a vegetarian dinner, serve it alongside quinoa or lentils. It’s bright enough to cut through rich mains like steak or creamy pastas.
How to Store Leftover Lemon Feta Asparagus
Store leftovers in an airtight container in the refrigerator for up to 3 days. The asparagus will soften, but the flavor stays bright. Note that the pistachios may lose some crunch; you can refresh them with a quick toast before serving.
Best Ways to Reheat Oven Roasted Asparagus
To restore some crispness, reheat in a 400°F oven for 5 minutes or in a dry skillet over medium-high heat, turning occasionally. Avoid the microwave, which makes the asparagus limp and watery.
Roasted Asparagus with Lemon, Feta, and Pistachios FAQs
Can I use frozen asparagus for roasting?
Fresh asparagus is best for roasting because frozen spears release too much water and won’t brown properly. If you must use frozen, thaw completely and pat very dry, then roast a few minutes longer.
What can I substitute for pistachios?
Almonds, walnuts, or pine nuts work well. Even toasted breadcrumbs will add crunch. Just use the same amount.
Can I make this asparagus ahead of time?
You can prep the asparagus by snapping ends and measuring ingredients, but roast just before serving for the best texture. Leftovers are fine, but they won’t be as crisp.
Is this recipe gluten-free?
Yes, all ingredients are naturally gluten-free. Double-check that your feta is labeled gluten-free if you’re sensitive.

Roasted Asparagus with Lemon, Feta, and Pistachios

Easy oven-roasted asparagus with lemon, feta cheese, and pistachios. This simple spring side dish goes great with any meal!
Ingredients
- 1 bunch asparagus
- 1 tbsp olive oil
- 0.5 lemon lemon, juiced
- salt, to taste
- black pepper, to taste
- 0.5 lemon lemon zest, zested
- 0.25 cup pistachios, chopped
- 0.25 cup feta cheese, crumbled
Instructions
- 1
Preheat the oven to 400 degrees F. Snap off the tough ends of the asparagus. The asparagus will break in the right place. Discard the ends.
- 2
Place the asparagus spears on a large baking sheet. Drizzle with olive oil and fresh lemon juice. Toss asparagus until well coated and then arrange the asparagus spears in a single layer on the pan. Season with salt and pepper, to taste.
- 3
Roast the asparagus for 12-17 minutes or until the asparagus is tender, but still crisp. The thickness of the spears will vary a little so check the asparagus at 12 minutes to be safe. I like my asparagus crispy so I usually leave it in longer.
- 4
Remove the pan from the oven. Top the asparagus with lemon zest, chopped pistachios, and crumbled feta cheese. Serve immediately.
