The Sweet-Savory Magic of This Fall Grilled Cheese

I spotted a jar of pumpkin butter at Trader Joe’s and knew I had to do something fun with it. The idea of pairing it with brie and dark chocolate in a grilled cheese sounded wild, but one bite proved it was genius. The sweet pumpkin butter, creamy brie, and rich chocolate melt together into something that feels both indulgent and surprisingly balanced. It’s the kind of sandwich that makes you close your eyes and just enjoy the mess.

3 Reasons to Make This Decadent Sandwich

  • It’s a dessert grilled cheese that comes together in 10 minutes flat, perfect for a quick sweet fix.
  • The combo of pumpkin butter, brie, and dark chocolate sounds weird but tastes incredible, like a fancy fall dessert in sandwich form.
  • You only need five ingredients and one skillet, so there’s no excuse not to try it.

Key Ingredients for This Decadent Sandwich

  • Pumpkin butter, sweet and spiced, it’s the star of this sandwich. I buy mine at Trader Joe’s, but you can use any brand or make your own. Look for one with warm spices like cinnamon and nutmeg.
  • Brie cheese, creamy and mild, it melts into a luscious layer. Use a ripe brie for the best melt; you can leave the rind on or trim it off.
  • Dark chocolate, I like 70% cacao for a nice contrast to the sweet pumpkin butter. Feel free to use milk or white chocolate if you prefer a sweeter sandwich.

Kitchen Tools for This Dessert Grilled Cheese

  • A heavy-bottomed skillet or nonstick pan for even browning
  • A spatula for flipping and pressing
  • A butter knife for spreading
  • A cutting board and sharp knife for slicing the sandwich

Tips for Making the Best Pumpkin Chocolate Brie Grilled Cheese

Let the brie come to room temperature before slicing, cold cheese won’t melt evenly and you’ll end up with a sad, lumpy sandwich. Spread the pumpkin butter all the way to the edges of the bread so every bite gets that sweet-spiced flavor. Don’t go overboard with the chocolate; 1.5 ounces is plenty, and breaking it into small pieces helps it melt faster without burning. Cook over medium-high heat and press the sandwich gently with a spatula after flipping to encourage even browning and melting. If the bread browns too quickly, turn the heat down a notch.

Pumpkin Chocolate Brie Grilled Cheese Variations to Try

Swap the dark chocolate for milk or white chocolate if you prefer a sweeter sandwich. Add a pinch of flaky sea salt right after cooking to balance the sweetness. For a different cheese, try camembert or even a soft goat cheese, both melt beautifully. If you want a more savory-sweet version, layer in thin slices of fresh apple or pear. Brioche or sourdough bread also work great in place of French or Italian bread.

What to Serve with This Brie and Chocolate Sandwich

Serve this sandwich right away while the cheese and chocolate are still gooey. For a light contrast, add a handful of crisp apple slices or a small arugula salad with a simple vinaigrette. If you’re leaning into dessert mode, dust the top with powdered sugar or drizzle with honey. A scoop of vanilla ice cream on the side turns it into an over-the-top treat.

How to Store Leftover Pumpkin Butter Grilled Cheese

This sandwich is best eaten fresh, but if you have leftovers, wrap them tightly in foil and store in the fridge for up to 2 days. The bread will soften, but the flavors still hold up. Let it come to room temperature before reheating.

Best Ways to Reheat This Fall Grilled Cheese

Reheat the sandwich in a skillet over medium heat for 1 to 2 minutes per side to bring back some crispness. You can also use a toaster oven or air fryer at 350°F for 3 to 4 minutes. Avoid the microwave, it will turn the bread soggy and the cheese rubbery.

Pumpkin Chocolate Brie Grilled Cheese FAQs

Can I use a different type of chocolate?

Yes, you can use milk, white, or semi-sweet chocolate. Dark chocolate (around 70% cacao) is recommended because its bitterness balances the sweet pumpkin butter, but any chocolate you love will work.

Can I substitute the brie?

Absolutely. Camembert is the closest substitute, but soft goat cheese or even a mild blue cheese like gorgonzola can work. Just make sure the cheese is soft and ripe so it melts well.

What if I can’t find pumpkin butter?

You can make your own pumpkin butter at home, there are plenty of easy recipes online. Or use a thick pumpkin purée mixed with a little brown sugar and pumpkin pie spice as a quick stand-in.

Can I make this sandwich in a panini press?

Yes, a panini press works great. Preheat it, place the sandwich inside, and cook for about 3 to 4 minutes until the bread is golden and the cheese and chocolate are melted. No need to flip.

How do I keep the chocolate from burning?

Break the chocolate into small, even pieces so it melts quickly. Cook over medium-high heat, not high, and keep an eye on the bread’s color. If the bread is browning too fast, lower the heat slightly.
