Why I Keep Coming Back to These Jam Almond Crumb Bars
I first made these Jam Almond Crumb Bars because I had half a jar of blackberry jam that needed using up, but now they’re my go-to for a quick dessert. The coconut oil gives the crust a tender, almost shortbread-like texture without any dairy, and the sliced almonds toast up into crunchy little nuggets that contrast beautifully with the jam’s sweetness. They’re the kind of bar that disappears before you’ve even finished cutting them.
Reasons to Love This Almond Crumb Bars Recipe
- The whole white wheat flour adds a subtle nutty flavor and a boost of fiber without making the bars dense or heavy.
- They come together with just one bowl and a mixer, so cleanup is minimal.
- You can swap out the jam for any flavor you have on hand, making it endlessly adaptable.
Key Ingredients for the Best Almond Crumb Bars
- Coconut oil: Use unrefined or refined, unrefined adds a subtle coconut flavor that works well with almonds, while refined keeps it neutral. For a buttery taste, substitute softened butter.
- Sliced almonds: They toast faster than slivered almonds, so watch them during baking. If you only have whole almonds, chop them roughly to a similar size.
- Jam: Choose a jam with fruit chunks or seeds for more texture. Seedless jams work too, but the bars feel less rustic. Thicker jams spread more evenly.
Kitchen Tools for These Easy Jam Almond Crumb Bars
- 8-inch square baking dish (glass or metal works)
- Stand mixer with paddle attachment or a hand mixer
- Medium mixing bowl and whisk
- Rubber spatula for scraping the dough
Tips for Perfect Buttery Crumb Bars Every Time
When you press the first half of the dough into the pan, don’t pack it too hard. Lightly press it just so it holds together, or the bottom layer can become tough. For the top crumble, break the dough into pea-size clumps and scatter them evenly. Leave some gaps so the jam can bubble up through. If the dough feels too soft to handle, chill it for 10 minutes before pressing, it makes the almonds easier to incorporate too.
Easy Almond Crumb Bars Variations to Try
Switch up the jam: raspberry, apricot, or fig jam all work beautifully. For a citrusy twist, stir a teaspoon of lemon zest into the dough. If you don’t have white whole wheat flour, you can use all-purpose flour with no other changes. To make them gluten-free, substitute a good 1-to-1 gluten-free flour blend and add a tablespoon of almond flour for extra tenderness. Swap the almonds for pecans or walnuts if that’s what you’ve got.
How to Serve Homemade Jam Bars
These bars are great on their own with a cup of coffee, but a scoop of vanilla ice cream or a dollop of whipped cream takes them over the top. For a brunch spread, set out the bars alongside fresh fruit and a pitcher of iced tea. If you want to dress them up for a party, dust the top with a little powdered sugar just before serving.
How to Store Leftover Jam Almond Crumb Bars
Store the bars in an airtight container at room temperature for up to 3 days. If your kitchen is warm or humid, keep them in the fridge to prevent the jam from getting sticky. They’ll last about a week chilled, but I doubt they’ll make it that long.
Freezing Instructions for Almond Crumb Bars
These bars freeze well for up to 2 months. Cool them completely, then wrap each bar individually in plastic wrap and place them in a freezer-safe bag or container. To thaw, let them sit at room temperature for about 30 minutes, or warm them in a 300°F oven for 5-7 minutes to revive the crunch.
Best Way to Reheat Jam Almond Crumb Bars
If you like your bars warm, pop them in a 300°F oven for 5-8 minutes until just heated through. You can also microwave one for 10-15 seconds, but that softens the crumble. For a crispier top, stick with the oven.
Frequently Asked Questions About Jam Almond Crumb Bars
Can I use salted butter instead of coconut oil?
Yes, but the texture will be slightly different. If you use salted butter, reduce the added salt to just a pinch. Coconut oil gives a tender, dairy-free crumb.
My dough turned out too dry. What went wrong?
The dough should be crumbly but hold together when pressed. If it’s powdery, you may have measured the flour by scooping instead of spooning and leveling, which packs in too much. Add a teaspoon of water at a time until the dough clumps.
Can I use homemade jam?
Absolutely. Homemade jam often has less pectin, so it may be a bit looser. Stir it well and spread it evenly without going all the way to the edges to avoid overflow.
Why did my jam bubble over the edges?
That happens if you spread the jam too close to the pan’s rim. Leave a 1/2-inch border of dough around the edges to catch any bubbling. Also, don’t overfill the jam layer.
