How This Gluten-Free Vegan Chocolate Banana Bread Came to Be
This gluten-free vegan chocolate banana bread came about because so many of you asked for a version of our popular chocolate banana bread that everyone could enjoy. I spent a few afternoons working with different flours and binders, and what emerged was a loaf that’s every bit as rich and moist as the original. The combination of ripe bananas, coconut oil, and flaxseed meal creates a tender crumb, while Dutch-process cocoa delivers deep chocolate flavor that makes it hard to believe this bread is free of eggs, dairy, and gluten.
Why You’ll Love This Rich Banana Bread
- Rich and moist: Dutch-process cocoa and ripe bananas give this loaf a fudgy, tender texture that rivals any traditional banana bread.
- Dairy-free and eggless: A flaxseed gel and coconut oil replace eggs and butter, so it’s suitable for vegans and those with dairy allergies.
- Simple ingredients: You only need one bowl for the wet mixture, and the dry ingredients whisk together in minutes. Great for a last-minute treat.
Key Ingredients for Moist Gluten-Free Banana Bread
- Flaxseed meal: Mixed with water, it forms a gel that acts as a binder, replacing eggs. Let it sit for a full 10 minutes to thicken properly.
- Dutch-process cocoa: Choose a good-quality brand for the richest color and smoothest chocolate taste. Natural cocoa can be used but will be less dark and more acidic.
- Ripe bananas: The best bananas for this recipe are heavily spotted or even black. They provide natural sweetness and help keep the bread moist.
Tools for Making Gluten-Free Vegan Chocolate Banana Bread

- Medium and large mixing bowls
- Whisk and rubber spatula
- Wire cooling rack
Tips for Perfect Gluten-Free Vegan Chocolate Banana Bread
For the best texture, always use very ripe bananas, the kind you’d normally toss. The flaxseed mixture needs the full 10 minutes to set; don’t skip this step or the batter will be too loose. When you combine the wet and dry ingredients, stir just until you no longer see streaks of flour, overmixing will make the bread dense. To test for doneness, insert a toothpick into the center; a few melted chocolate chips on the pick are fine, but you should see only a few moist crumbs, not raw batter. Let the bread cool in the pan for 15 minutes before turning it out, so it firms up enough to slice cleanly.
Gluten-Free Vegan Banana Bread Variations to Try
If you want extra crunch, fold in a half cup of chopped walnuts or pecans along with the chocolate chips. To turn this into muffins, divide the batter among a lined 12-cup muffin tin and bake for 20 to 22 minutes, or until a toothpick comes out clean. For a less sweet version, cut the chocolate chips to a half cup and use an extra banana. You can also stir in a quarter cup of shredded coconut or a swirl of peanut butter for a different flavor.
How to Serve Chocolate Banana Bread
This banana bread is excellent plain, but I love it with a generous spread of almond butter or a drizzle of melted coconut butter. For a more indulgent dessert, top each slice with a scoop of dairy-free vanilla ice cream and a sprinkle of flaky salt. It’s also delicious toasted the next morning, the edges get slightly crisp while the interior stays tender.
How to Store Leftover Chocolate Banana Bread
Store leftover bread wrapped tightly in plastic wrap at room temperature for up to 4 days. This keeps the crumb soft. If your kitchen is warm, you can refrigerate it, but it may dry out slightly faster.
Freezing Gluten-Free Vegan Chocolate Banana Bread
This bread freezes beautifully. Cool it completely, then wrap in a layer of plastic wrap and a layer of aluminum foil. Freeze for up to 1 month. To serve, thaw the whole loaf at room temperature or defrost individual slices in the microwave. Once thawed, enjoy as is or toast it.
Best Ways to Reheat This Banana Bread
To bring back that just-baked warmth, toast individual slices in a toaster or in a toaster oven at 350°F for about 5 minutes. You can also microwave a slice for 10 to 15 seconds, but it won’t have the crisp edges that toasting gives. For a whole loaf, reheat in a 300°F oven for 10 minutes, tented with foil to prevent over-browning.
Gluten-Free Vegan Chocolate Banana Bread FAQs
Can I use regular all-purpose flour instead of gluten-free flour?
No, this recipe is specifically developed for a gluten-free all-purpose blend. Regular flour contains gluten, which will change the texture and make the bread not gluten-free. If you don’t need a gluten-free version, our original chocolate banana bread uses all-purpose flour.
Why is my banana bread dense?
Dense banana bread is usually the result of overmixing the batter or using bananas that aren’t ripe enough. Stir the dry ingredients into the wet just until combined, a few lumps are fine. Also, make sure your bananas are heavily spotted; they provide the moisture and sweetness needed for a light crumb.
Can I substitute the coconut oil?
Yes, you can use an equal amount of melted vegan butter or another neutral oil like avocado oil. Coconut oil gives a subtle coconut flavor and a moist crumb, but any oil that’s liquid at room temperature will work. Note that the texture may be slightly different.
