Why This Butternut Squash Gnocchi Is a Fall Favorite
When I need a dinner that everyone at my table will actually eat without fuss, this butternut squash, sausage, and kale gnocchi is what I turn to. My boys love the mini gnocchi from DeLallo, and I love that I can get roasted squash, savory sausage, and bitter greens into one skillet. The dried cranberries add little pops of sweetness that make it feel special. Roasting the squash brings out its natural caramelization, while the sausage and kale create a savory, earthy base. It’s a complete meal that tastes like autumn in every bite.
Reasons to Love This Butternut Squash Gnocchi
- The combination of sweet roasted squash and savory Italian sausage creates a satisfying contrast that’s hard to resist.
- This dish comes together quickly, the squash roasts while you cook the sausage and gnocchi, so most of the work happens simultaneously.
- It’s a complete one-bowl meal with vegetables, protein, and carbs, perfect for a busy weeknight fall dinner.
Key Ingredients for This Butternut Squash Gnocchi
- Butternut squash: Choose a squash that feels heavy for its size with firm, unblemished skin. It adds natural sweetness and creamy texture when roasted.
- Gnocchi: I used DeLallo’s mini potato gnocchi, but any fresh or shelf-stable gnocchi works. Mini gnocchi cook faster and are fun to eat.
- Parmigiano Reggiano: Grate it fresh from a block for the best flavor and melting. Pre-shredded won’t give the same creamy finish.
Kitchen Tools for This Gnocchi Recipe
- Large baking sheet, for roasting the butternut squash in a single layer.
- Large pot, to cook the gnocchi.
- Large skillet, for cooking the sausage and greens.
- Box grater or Microplane, for grating fresh Parmigiano Reggiano.
Expert Tips for the Best Butternut Squash Sausage Kale Gnocchi
Cook the gnocchi just until they float, then drain them right away so they don’t turn soggy. While they cook, brown the sausage thoroughly, breaking it into small bits for better texture. For the kale, strip the leaves from the stems before chopping, the stems take longer to soften. And don’t skip the dried cranberries; they add a tangy sweetness that balances the savory sausage and earthy kale. If you want more caramelization on the squash, spread it in a single layer on the baking sheet and avoid overcrowding.
How to Switch Up This Fall Gnocchi Recipe
You can swap the sausage for mild or spicy Italian sausage, or use chicken sausage for a lighter option. For a vegetarian version, omit the sausage and add a can of drained white beans or chickpeas. If you don’t have fresh rosemary, use ½ teaspoon dried. Kale can be replaced with spinach or Swiss chard, but add spinach at the very end so it just wilts. And if you can’t find butternut squash, try cubed sweet potato or pumpkin.
What to Serve with Butternut Squash Sausage Kale Gnocchi
This gnocchi is hearty enough to stand alone, but a simple green salad with a lemon vinaigrette cuts through the richness. Crusty bread is great for sopping up any bits left in the bowl. If you want to round out the meal, a glass of dry white wine, like Sauvignon Blanc, complements the sage and rosemary notes.
How to Store Leftover Gnocchi
Store leftovers in an airtight container in the refrigerator for up to 4 days. The gnocchi will absorb some sauce and soften, but it’s still delicious.
Can You Freeze This Butternut Squash Gnocchi?
Yes, you can freeze the fully cooked dish. Let it cool completely, then transfer to a freezer-safe container. It will keep for up to 3 months. To reheat, thaw overnight in the fridge and warm in a skillet over medium heat, adding a splash of chicken broth if needed to loosen it up.
Best Way to Reheat Leftover Gnocchi
The best method is to reheat in a skillet over medium heat with a tablespoon of water or broth. Cover the skillet and let it steam for 2-3 minutes, then uncover and cook until heated through. This helps the gnocchi regain some of its original texture. You can also microwave individual portions, but the gnocchi will be softer.
