Why This Baked Pasta with Spinach and Ricotta Is My Go-To Lazy Dinner
I love stuffed shells, but sometimes I just don’t want to stuff them. It’s not hard, but I give myself permission to be lazy. Last week I was in my pajamas at 4 p.m., craving cheesy stuffed shells. Instead, I made this baked pasta with spinach and ricotta. Same flavors, less work. Josh helped with the filling while I whipped up my easy marinara sauce. It turned into the perfect easy weeknight meal.
3 Reasons This Ricotta Spinach Pasta Bake Wins Dinner
- No stuffing required, just layer everything in a dish and bake.
- The creamy ricotta-spinach filling gets a subtle warmth from nutmeg and a kick from crushed red pepper.
- It comes together in under an hour, with only 10 minutes of hands-on work.
Key Ingredients for a Great Ricotta Spinach Pasta Bake
- Ricotta cheese, Full-fat ricotta gives the creamiest texture. Part-skim works too, but the filling will be less rich.
- Frozen chopped spinach, Thaw it completely and squeeze it dry in a clean kitchen towel. This step is crucial to avoid a soggy casserole.
- Marinara sauce, Use your favorite jarred sauce or make my easy marinara. Either way, you need about 4 cups to coat all the layers.
Kitchen Tools for This Cheesy Baked Pasta
- 9×13-inch baking dish, the standard size for this casserole
- Large pot for boiling pasta
- Medium bowl for mixing the ricotta filling
- Aluminum foil for covering during the first part of baking
Tips for the Best Baked Pasta with Spinach and Ricotta
Use small pasta shapes like shells or elbows so the sauce and filling cling to every piece. Cook the pasta just to al dente, it will continue cooking in the oven. Thaw the frozen spinach completely and squeeze out as much water as you can. Too much moisture makes the filling watery. Let the baked pasta rest for 5 minutes after it comes out of the oven. That helps the layers set so you get clean slices.
Layering Tips for Even Baking
How you layer this casserole matters. Start with half the pasta, then half the marinara. Spoon the ricotta-spinach mixture evenly over the sauce, don’t dump it all in one spot. Sprinkle half the mozzarella, then add the remaining pasta and sauce. Finish with the rest of the mozzarella. Covering the dish with foil for the first 25 minutes traps steam and heats the center without burning the cheese. That final uncovered bake gives you those lightly browned edges everyone fights over.
Easy Variations for This Stuffed Shells Alternative
For a meaty version, brown 1 pound of ground beef or Italian sausage and layer it with the pasta. If you need a gluten-free dinner, use your favorite gluten-free short pasta, just cook it a minute less than the package says. Swap the spinach for thawed, squeezed kale if you prefer. You can also dial up the heat by adding an extra pinch of crushed red pepper or a drizzle of hot honey before serving.
What to Serve with Baked Pasta with Spinach and Ricotta
I like to serve this with crusty garlic bread to soak up any extra sauce. A simple green salad with lemon vinaigrette cuts through the richness. If you want something heartier, roasted broccoli or asparagus on the side works well. Sprinkle fresh basil over the top just before serving for a pop of color.
How to Store Leftover Baked Pasta with Spinach and Ricotta
Let the casserole cool completely, then cover the dish with foil or transfer leftovers to an airtight container. It will keep in the fridge for up to 4 days. The flavors actually get better as they meld overnight.
How to Freeze This Ricotta Spinach Pasta Bake
Assemble the casserole in the baking dish but don’t bake it. Cover tightly with a layer of plastic wrap and then foil. Freeze for up to 3 months. When you’re ready to bake, thaw it overnight in the fridge. Remove the plastic, cover with foil, and bake at 350°F for 25 minutes. Then remove the foil and bake another 10-15 minutes until bubbly and browned.
Best Ways to Reheat Baked Pasta with Spinach and Ricotta
For a single serving, microwave it in 30-second bursts until hot. For larger portions, cover the dish with foil and reheat in a 350°F oven for about 15 minutes. If the pasta seems dry, spoon a tablespoon of water or extra marinara over the top before reheating.
Baked Pasta with Spinach and Ricotta FAQs
Can I use fresh spinach instead of frozen?
Yes. You’ll need about 1 pound of fresh spinach. Wilt it in a hot skillet with a splash of water, then let it cool and squeeze out as much liquid as you can. Chop it finely before mixing into the ricotta.
What pasta shape works best?
Short, sturdy shapes like shells, elbows, or ziti are ideal. They hold the sauce and filling well. Avoid long strands like spaghetti, they don’t layer as neatly.
Do I have to cook the pasta before baking?
Yes. Cook it to al dente, about 7 minutes. The pasta will finish cooking in the oven, but if you start with raw pasta it will be crunchy in the center.
Can I assemble this casserole a day ahead?
Absolutely. Assemble the dish, cover it, and refrigerate for up to 24 hours. Add about 10 minutes to the covered baking time since it starts cold.
