This easy black bean burger recipe delivers a crispy exterior and tender interior. Packed with protein and smoky chipotle flavor. Perfect for a quick, healthy meal.

Equipment You’ll Need

A cast-iron skillet is ideal for pan-frying these patties because it holds heat evenly and gives you that deep, crispy crust. You’ll also need a large mixing bowl, a baking sheet lined with parchment paper if you choose the oven method, and an air fryer if you want the quickest route to a crispy exterior. A sturdy spatula helps when flipping the delicate patties. No food processor required—mashing by hand gives the perfect texture.

Tips for Perfect Black Bean Patties

Blotting the cooked vegetables with a paper towel is a small step that makes a big difference. Excess moisture will cause the patties to steam rather than brown, so don’t skip it. When mashing the beans, leave a few whole for texture—over-mashing turns them pasty. Pack each patty firmly; a loose patty is more likely to crumble in the pan. If the mixture feels too wet, add an extra tablespoon of breadcrumbs. The chipotle chile adds smoky heat, so mince it very finely to distribute it evenly. Cook in batches to avoid overcrowding, and adjust the heat if the outsides brown too quickly before the centers set.

Freezing Your Homemade Black Bean Burgers

These patties freeze beautifully, making them a great make-ahead option. To freeze uncooked, arrange the shaped patties on a parchment-lined baking sheet in a single layer. Freeze until solid, about 1–2 hours, then transfer them to a freezer-safe bag or container, separating layers with parchment. They’ll keep for up to 3 months. Cook from frozen: add 2–3 minutes to the pan-fry time, or bake at 375°F for 22–25 minutes, flipping halfway. You can also freeze cooked patties—just let them cool completely, then wrap individually and freeze. Reheat directly from frozen using the oven or air fryer.

Reheating Leftover Patties

To bring back that crispy exterior, skip the microwave and use the oven or air fryer instead. Preheat your oven to 375°F, place the patties on a parchment-lined baking sheet, and warm for 8–10 minutes, flipping once. In an air fryer, cook at 375°F for 5–7 minutes, flipping halfway. If the patties look dry, brush them lightly with oil before reheating. This method keeps the inside tender and the outside crisp, just like when they were freshly made.

Frequently Asked Questions

Can I use a different type of bean?

Yes, you can substitute black beans with kidney beans, chickpeas, or pinto beans. The texture will vary slightly—chickpeas are firmer, so you may need an extra tablespoon of breadcrumbs to bind the mixture. For the best black bean burger, stick with black beans for that classic creamy interior.

Can I make these gluten-free?

Absolutely. Swap the breadcrumbs for gluten-free breadcrumbs or rolled oats (use certified gluten-free oats if needed). The patties will hold together just as well. This easy black bean burger recipe is already vegetarian, and with that swap it becomes gluten-free too.

Why are my patties falling apart?

The most common reasons are too much moisture or not enough binder. Make sure you blot the cooked vegetables thoroughly. Also, pack the patties very firmly—loose shaping leads to crumbling. If the mixture still seems wet, add a little more breadcrumbs. A well-compacted patty is the secret to a sturdy black bean patty.

Ingredients

  • 1 tbsp olive oil or avocado oil
  • 1 medium onion finely chopped
  • 1 red bell pepper finely chopped
  • 3 garlic cloves minced
  • 2 cans black beans drained, rinsed, and patted dry
  • 1 large egg
  • 0.75 cup breadcrumbs can use gluten-free breadcrumbs
  • 1 chipotle chile in adobo sauce diced plus 1 tablespoon of sauce
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 0.5 tsp smoked paprika
  • 0.25 tsp ground pepper
  • 2 tbsp chopped cilantro
  • 6 hamburger buns toasted
  • toppings: cheese, lettuce, tomato, sliced red onion, avocado, pickles, etc.

Equipment

  • large cast iron skillet
  • large bowl
  • plate
  • paper towel
  • spatula
  • knife
  • cutting board

Instructions

  1. In a large cast iron skillet, heat the oil over medium high heat. Add the onion and red bell pepper. Cook for 4 minutes or until tender, stirring occasionally. Add the garlic and cook for 1 more minute. Transfer to a plate and let cool to room temperature. Use a paper towel to blot excess moisture.
  2. In a large bowl, add black beans and mash until mostly broken up with a few whole beans remaining.
  3. Stir in the onion, pepper, and garlic. Add the egg, breadcrumbs, chipotle chili, chipotle sauce, cumin, chili powder, smoked paprika, salt, pepper, and cilantro. Mix until well combined.
  4. Divide the bean mixture into 6 even portions and shape into 3/4-inch thick burger patties. Make sure the burger patties are as compact as possible; this will help prevent them from falling apart.
  5. Preheat the cast-iron skillet over medium heat. Add a 1 to 2 tablespoons oil to the pan and cook the patties for 6 to 8 minutes per side, or until brown on both sides and the middles are set. If the patties start browning too fast on the outside, turn down the heat a little. Don’t overcrowd the pan, you will have to cook them in batches. I do 3 at a time.
  6. Remove from heat. Place the black bean burgers on buns and top with desired toppings. Serve immediately.
  7. Oven: Place patties on a parchment paper-lined baking sheet and bake at 375°F for 20 minutes, flipping halfway through.
  8. Air Fryer: Air fry at 375 degrees F for 12 minutes, flipping halfway through, or until crispy and cooked through.
